Well, if you mean defending your base against them, I like to quickly get one or two scouts built but if you don't have enough time to get those out, just get your zealots in close so that their siege can't hit you. It's tough but you should lose a minimal amount of them. Really though, air units are the key to taking them out. I'm sure other people have more complicated strategies but that's me.

I gotcha, now, my 2nd inquiry is how do you take out said siege tanks when your attacking the base? Because chances are by the time i have a bunch of scouts ready, they'll have a good amount of goliaths on hand.

If you are attack their base you could have a few carriers on hand i'm sure. Maybe sneak in a psi storm or drop a reaver next to them. If you're fast enough and there are enough tanks around you could use a zealot bomb (drop a zealot right next to a tank and let all the other tanks destroy their own unit while they fire at the zealot.)

the trick is multiple attacks. full on attacks never work. in warcraft 3, i love killing noobs who come at me from only one angle. then i split my army half half and to a pincer movement against them.
get scouts and carriers and bring them near the worker miner area of the enemy base. cripple their economy. then have the air assault join the ground assault busy attacking the choke point defence. have zealots, dark templars, high templars with storm, dragoons, and some other support units attacking the bunkers and siege tanks, and pincer them with the carriers and scouts from behing.

Thx guys, once again, this is helping me a lot. Now my new question is should i be focusing more on the building of carriers or scouts?

diversity is key. i'd say have 3 carriers and 6 scouts.

yeah. and 3-4 gateways as well. throw in some reavers in the choke point defence area.

why would you even have scouts?
    drop zealots on the tanks
or psi storm (the comps really like this one)

try an establish multiple command centers that way if ur main one blows out then you have a fall back, make sure u have the same number of SCV's/Probes at each base if not more

i use around 10-12 scvs for minerals. some expansions have less minerals though so using that many is not so good.
