If mid game opponent goes Hydra/Muta, and im already on Roach/Hydra, should I stick to roach/hydra? Or should I start making some corrupters to counter his mutas?

I'd just throw in a few corruptors. Let the roachs take care of the ground. they're pretty good at that for the most part.

You can also plant some Spore near your mineral lines and out produce his hydra count.

I'd suggest you stay on roach/hydra.

What you will want to do is make more hydras than you normally would to counter the mutas. Spore crawlers would be a decent idea as well for base defense.

I'd avoid going banelings or spires just because it means more teching and more time to do what you can do already.
