course we could always make it steal health lol and latch onto other big units, siege tanks, ships, etc.

Lol, then how does the seige tank kill it? Maybe the driver will see all the other seige tanks start firing on him, then he'll go crazy and start firing back at them, then the whole base will get blown up.
I just can't see the mineral one actually making it out with the load, but then if the resources are gone it doesn't really matter anyway. Although if itcould steal minerals they should come out upon death for balance reasons
But can it leech onto mechanical units? From what you are saying, it sounds like the Minutor sucks the life force of units, but can it suck electricity from mechanical units? And how big is it?
The next suggestion of a unit name, or unit that is spelled wrong. Will result in me blowing my own brains out. I'm serious here.... all over the wall...
