You should have moved to step 2 though Retribution was a multiplayer map pack, so there was no story to be 'canon' Insurrection is considered canon since it was approved by Blizzard and does have a single-player segment.
Canon means 'officially apart of the Starcraft universe' So like anything Blizzard makes is by default part of the Starcraft universe (ie the story is officially accepted, just as much as the story in SC1 & BC). But if I were to make a huge story filled single player campaign for SC1 that wouldn't be canon, because Blizz had nothing to do with it.
Exactly. And it's possible, if Blizz likes the direction a thrid party, IE us, went in, they could adopt it into canon. Canon pretty much anything that Blizz likes and accepts.

I believe so. I think it's made by Blizz. A rule of thumb, if you find it on the net, it's most likely not canon, but if you buy it, chances are, it is.
Well neither was Retribution at first, but when Blizz gave its seal of approval, it became canon. Project Rev might get Blizz acceptance because they said that its campaign focuses on parts of the sector largely unaffected by the main wars, so it doesn't change anything from the original story.
